Chocolate Chip Energy Balls

A great base energy ball recipe which can be easily adapted to your tastes by adding your own mix-ins.

Ingredients

Chocolate Chip Energy Balls:

  • 1 1/4 cups rolled oats I only had porridge oats but these were also fine
  • 2 tbsp 'power mix-ins' chia/flax/hemp seeds
  • 1/2 cup peanut butter If you'd rather use Almond or any other nut butter swap it out for your preference
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips see below for some alternative mix-ins that you can swap the chocolate chips out for

White Chocolate and Cranberry:

  • 1/4 cup white chocolate chips
  • 1/4 cup dried cranberries

Trail Mix

  • 3 tbsp chocolate chips
  • 3 tbsp chopped peanuts
  • 2 tbsp raisins

Double Chocolate:

  • 1/2 cup chocolate chips
  • 2 tbsp cocoa powder

White Chocolate and Cinnamon:

  • 1/2 cup white chocolate chips
  • 3/4 tsp cinnamon

Instructions

  • Place all of the base ingredients in to a large bowl along with your chosen mix-ins and stir until well combined. If the mix seems too wet add some more oats, too dry add some more nut butter. Once mixed the dough should form a sticky dough.
  • Put the bowl in the fridge for around 30 minutes to set
  • Take the bowl out of the fridge and roll into balls of around 1 inch in size, this should give you about 18 balls.

Notes

These energy balls can be kept in the fridge for up to 2 weeks or frozen for later.
If you have a nut allergy why not try sunflower seed butter instead.
Feel free to come up with your own flavour mix-ins and let me know which flavours you find work for you. Once you have this base its really adaptable.
